Mediterranean food is regarded as one of the most diverse, versatile, and healthy cuisines, borrowing from the countries bordering the Mediterranean shores like Italy, Greece, Spain, Morocco, Egypt, France, Turkey and Istanbul, to name a few. This region is known for a fresh, whole foods, plant-forward approach to cooking. If you’re interested in learning more about how a plant-based diet can help you thrive, join Chef Linda and learn how to create some popular dishes from this region and have an opportunity to ask questions. You’ll enjoy adding a new, heart-healthy cuisine to your global vegan skill set in the kitchen. Bring your appetite for this flavorful meal!
In this demonstration-style class, you’ll learn how to make:
- Mezze Platter
- Koftas with Cashew Tzatziki
- Avgolemono Soup (Greek Egg and Lemon Soup)
- Vegetable Paella
- Olive Oil Almond Fig Cake

Recipes may contain gluten, nuts, and/or soy.
Common food allergens (i.e., peanuts, tree nuts, soy, wheat/gluten, coconut) are present in our kitchen and used in many of our classes and as a result, we are unable to accommodate people with severe food allergies. If you have questions about ingredients used in a class, please email the instructor.
Our menus are created in advance and as a result, may need to be adjusted. We reserve the right to change menu as necessary.
The minimum age to register for a class is 16 unless otherwise noted.
Cancellation Policy for Classes:
We understand that life happens and emergencies do occur. However, we also hope you understand our commitment to all of our guests and the preparation that goes into creating a successful class. You may cancel your registration for a class up to 5 days in advance of the class and receive a full refund or transfer to another class in the next 12 months. Unfortunately, we cannot refund registration fees for classes canceled less than 5 days prior to class, however, we are happy to transfer your registration to another class in the next 12 months. To cancel a registration, please email Chef Linda or Chef Sara.
Catskill Animal Sanctuary reserves the right to cancel any class that fails to attract sufficient enrollment, for chef illness, inclement weather, or other organizational emergency. We will contact you by email or telephone and issue a full refund or you may request to be transferred to another class of your choice (depending on availability.) If you feel that you are unable to attend a class due to inclement weather, please call Chef Sara (for her classes) at 740-541-4043 or Chef Linda (for her classes) at 203-615-8139 and your registration fee will be applied to another class within 12 months.
