Pasta and salad may be a weeknight go-to, but that doesn’t mean it has to be boring. Join guest chef Noor Murad to learn a Bahraini/Persian take on pasta sauce that makes fresh herbs the star of the show. You’ll start with a technique that just might shake up what you thought you knew about cooking with herbs. She gently cooks down gigantic handfuls of them in olive oil until they are deeply fragrant. Then, we’ll take it to the next level with the addition of warmed chickpeas, a splash of saffron water for elegance and crispy, savory onions. Gild the lily, if you’d like, with grated halloumi cheese for some extra richness. To accompany your salad, you’ll learn a quick, bright salad with Noor’s favorite yogurt salad dressing. Born in Bahrain, trained in New York and now working with Yotam Ottolenghi in London, Noor has co-authored ‘Ottolenghi Test Kitchen: Shelf Love’ as well as a second Ottolenghi Test Kitchen book coming out in September. She has also developed recipes for the books “Falastin” and “Flavor,” as well as for Ottolenghi’s MasterClass series.
About Noor: Noor Murad is a Bahraini-born chef whose international work experience eventually brought her to the Ottolenghi family in 2016. She has sinced developed recipes for Falastin, Ottolenghi Flavour, Ottolenghi’s MasterClass series and other online Ottolenghi publications. Her Bahraini roots have a strong influence on her cooking, with Arabic, Persian and Indian flavours making a prominent appearance in her recipes.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to class (or within 48 hours of registering, if you sign up less than a week in advance), you will receive an email with the ingredients, equipment and prep you’ll need to cook along with us, if you choose.
After class, you will receive a recording of the event, as well as a folder of recipes and resources that we discuss during the event. Class recordings are available to all registered attendees for two weeks following each event.
Payments for Milk Street live stream classes are non-refundable. If you find yourself unable to attend, you may transfer the ticket to someone else, but we are unable to refund fees and all payments are final. Classes are subject to cancellation at any time. In the case of cancellation by the event organizer, all paid tickets will be fully refunded.
