  &amp\; Green Olive Focaccia\n\nDescription:\nFrom flaky Malaysian roti to
  Moroccan harcha\, the concept of a quick-cooking bread that serves as a f
 oundation of countless meals is nearly universal—and one that we can’t
  get enough of at Milk Street. Join us in-person to explore the world of f
 latbreads through three of our favorites: Turkish Yogurt Flatbreads that b
 ecome Lahmajoun when topped with paprika-spiked beef\, tomatoes and roaste
 d red peppers\; Korean skillet pancakes that invite you to toss in almost 
 any aromatic\, vegetable or favorite ferment\; and bubbly\, crispy focacci
 a asking to be dunked in good olive oil or turned into an extraordinary su
 mmer sandwich. As you mix\, rest\, proof\, shape\, top and bake these flat
 breads\, we’ll sneak in a surprising amount of baking science and culina
 ry history. You’ll see why these recipes call for different ratios of al
 l-purpose\, whole wheat and bread flour\, not to mention potato flour for 
 good measure. We’ll cover the science of leavening agents\, from water
 —yes\, steam is a powerful leavener—to baking powder and soda to yeast
 . We’ll do some calculations to help you understand the relationship bet
 ween time\, temperature and chemistry so that flatbreads are always ready 
 on your schedule. And you’ll get to do some improvising as we decide how
  to flavor the focaccia we make in class—and you’ll want to start brai
 nstorming how you’ll customize the batch of dough you’ll go home with.
 \n\nNOTE: This in-person class concludes with a sit-down\, family-style di
 nner. We’ll make a big salad for you to enjoy along with your flatbreads
 \, as well as a new favorite dessert from rural Italy.\n\nAbout April: Ap
 ril Dodd is Milk Street’s Associate Director of Education. She began her
  culinary career at Middlebury College\, where her first food job was maki
 ng enormous batches of granola. Since then\, her cooking pursuits have inc
 luded managing the college's summer food preservation program\; working in
  an organic bakery in France\; developing recipes for a cupcake shop\; fou
 nding a culinary skills training program in Nairobi\, Kenya\; working as a
  consultant to the UN Food and Agriculture Organization\; and a stint as t
 he chef at a women-only retirement community in her hometown of Lexington\
 , KY.\n\nOur hands-on cooking classes are capped at 14 attendees. Students
  work in pairs of two at fully equipped stations. Each attendee requires t
