Chef Katie shows us how to have it both ways! We will learn how to incorporate well-known Middle Eastern flavors into dishes that follow Ayurvedic food principles, which draws on an ancient yet timeless healthcare system.
Good digestion is the name of the game. You’ll leave the class feeling physically and emotionally satisfied, and you’ll understand how to apply these principles to any type of cuisine.
Get ready to bake homemade falafel and tahini sauce, then move onto a pairing of a nutritious one-pot Arabic rice and lentil dish and a tasty, melt-in-your mouth braised cabbage side. This complete and nourishing meal ends with a cookie that uses a healthy, natural sweetener—dates!

Bio: Katie grew up as a picky eater. Although her taste buds eventually became more curious, much of her diet was characterized by meals which were on-the-go, frozen, and nutrient-deficient. It wasn’t long before she encountered severe digestive distress. Through many doctor appointments, self-study, and experimentation, she eventually found resonance in the concept that food is medicine. This led her to study Ayurveda, holistic nutrition, and culinary skills. This prompted a gradual career shift from teaching outdoor education, math, and science to holistic culinary education. She loves using creativity with new and old recipes, meal planning, grocery store and farmers market shopping, and inspiring others to make healthy food and lifestyle choices.
When she is not in the kitchen, Katie is often in the sunshine hiking, biking, skiing, gardening, exploring somewhere new, reading, practicing yoga, or spending time with family and friends.
