Come learn the secret of spices. Join Chef Evan Francois on Zoom to learn how to make Moroccan food at home! Chef Evan will demonstrate how to cook chicken tagine, spiced yogurt, spicy carrot salad, and couscous. Once the demonstration is finished, Chef Evan will watch you cook the dishes at home and help you perfect them. All the ingredients and equipment you will need are detailed below. We are looking forward to seeing you on Zoom!
Menu: Chicken Tagine, Spiced Yogurt, Spicy Carrot Salad, Couscous
Ingredients: 2 tablespoons grapeseed oil, 3 tablespoons butter, ½ large yellow onion, 2 cloves garlic, 1 ½ teaspoons ground cinnamon, 1 teaspoon ground ginger, 3 teaspoons ground cumin, 3 teaspoons ground coriander, 1 ½ cups diced tomatoes (canned), 1 cup chickpeas (canned), 1 cup raisins, ½ vanilla bean, 4 chicken thighs, 3 cups chicken stock, 2 tablespoons cilantro, 2 tablespoons harissa, ½ cup fresh lemon juice, 3 tablespoons olive oil, ¾ pound carrots, 1 cup flat-leaf parsley, ½ cup feta, 1 cup yogurt, ½ tablespoon chili powder, 1 tablespoon fresh mint, 1 ½ cups couscous
Equipment Needs: Rimmed sauté pan with lid, 3 spatulas, cutting board, chef knife, 2 medium bowls, whisk, medium pot with lid, measuring cups, measuring spoons, stove
Optional Equipment: Tagine, mandolin
