Contemporary North African cuisine is drawn from the Mediterranean, Syria, Persia, and Egypt, along with France and Spain, which ruled the era for a time. In this class, we’ll explore the food of the Maghreb region of Northwest Africa, consisting of Morocco, Algeria, Tunisia, Libya, and Mauritania. Focusing in on Tunisia, we’ll prepare the country’s classic hot sauce, harissa, and you’ll get to taste the difference between fresh harissa and a prepared version. You’ll also learn to make Ras el hanout, a spice blend for the tagine. Also on the menu will be Harira, the traditional soup of Morocco and Algeria — along with some other enticing recipes. Please join Brenda Washnock, contest cook and Mediterranean Cuisine Enthusiast, on this journey to touch on this exquisite cuisine.

$15 for owners, $30 for all others

This class is not hands on, and no specialty diets – it will have meat and gluten.

Owner price is only available to owners. Owners who purchase tickets on behalf of non-owners must pay the general admission price for that ticket. The owner price is a benefit for Co-op owners.

Prepayment is required to reserve a space in this class. A minimum of six people will be required to have the class. The Co-op can make no guarantee to accommodate all food allergies and restrictions for this class.
